Dinner for Tonight

Cumin Lime Beef Kabobs with Zucchini Skewers

20 prep time - Marinating time:2-24 hrs.
Servings - 4

Ingredients

Marinade

2 tbsp soy
2 tbsp lime juice
2 tbsp extra-virgin olive oil
1 clove garlic, minced
3/4 tsp ground cumin
1/2 tsp pepper
1 lb strip loin steak
1 inch thick cubes
1 lime cut into 8 wedges

Zucchini skewers

1 small zucchini
3 green onions (white and green parts only)

Preparation

In a large Ziploc bag, whisk together soy sauce, lime juice, oil, garlic cumin and pepper.  Add beef cubes and toss to coat.  Refrigerate min. 2 hrs.  Zucchini Skewers: Meanwhile, halve zucchini length-wise; cut into 1/2 inch thick slices.  Cut green onions into 1-inch pieces. Onto 4 skewers(soaked wood or metal) alternately thread zucchini and green onions; set aside.  Thread 4 lime wedges onto 4 separated skewers; divide beef among skewers and end with remaining lime wedges.  Set marinade aside.  Place zucchini skewers on greased grill over medium high heat; close lid and grill, turning once, for 5 min.  Add beef kabobs to grill; brush with marinade and discard any remaining marinade. Close lid and grill, turning 4 times, until beef is browned but still pink inside and zucchini and onion are tender, about 10 min.
